When you want to make pastry customers happy, and ensure they return, it’s not enough to have an interesting recipe. It’s crucial what ingredients you choose and how you handle them. Looking for the best ingredients is a never-ending process. Our suppliers know that we have chosen them, but not necessarily forever. We do not only wait for what they offer to us but we constantly look for innovations: talk to relevant groups, search the internet, etc. The suppliers who understand our approach provide suggestions themselves. Everything around us keeps evolving, and also in the field of ingredients new possibilities emerge. How would we have found, for example, raspberries from Serbia, Bosnia and Herzegovina, top-quality whipping cream from Spain, chocolate from Belgium, caramel and chocolate crunchies from Italy, peaches from Greece, rum from the Caribbean, cream products and ricotta from Tuscany, otherwise? Yes, we know that all this can be supplied locally too (apart from bananas, which will probably never grow in North Moravia) but for the moment we have found the best versions of what we need only in those places. But we will not stop looking and our new discoveries of finer things are confirm that we are on the right path.
We’re trying not to rest on our laurels as far as quality and creativity of the production process is concerned. We experiment on our own, but most of all we like to be taught by masters of this art around Europe and beyond.
